Why we love it: Yum! The sweetness? Deep. The acidity? Balanced. And that body? Syrupy! We're not not imagining bathing in this delicious. Roasted lighter to bring out a creamy, spiced apple flavor symphony. Enjoy as a sweet batch brew or pour over. 

Who it comes from: This is a women's lot from a co-op in Mexico called Ecologicos de la Sierra Madre de Chiapas (CESMACH). The farmers live in the buffer zone of the El Triunfo biosphere where organic coffee farming is strongly promoted in the delicate cloud forest habitat.

Why it matters: CESMACH's guiding principles find a balance between developing social programs and sustaining a competitive business with a focus on environmental and social impact in their community. Conservation of natural resources, strong values of respect, democracy and non-discrimination are pillars of the cooperative.
